In 1946 John and Freda Wilson decided to turn their holiday cottage ; Glan-yr-Afon into a small guest house - The Lobster Pot - serving afternoon teas. Over the years they developed The Lobster Pot into a renowned seafood restaurant.Their daughter Lindy Wood assumed responsibility in 1989 and has kept the homely family run atmosphere. The lobsters, crabs, scallops and dover soles served in the candlelit restaurant are supplied by the Wilsons own fish merchanting business.

Moules Mariniere
Serves two:
2lbs/900g of Clean mussels
1 med. Onion, finely chopped
1 Clove of garlic
4fl.oz./100ml. White wine
2fl.oz./50ml. Double cream
Black Pepper
Parsley & lemon to garnish
½ cup of water

For the sauce : Gently fry the onion and garlic for 3-4 mins. Then add the wine and gently cook for a further 3-4 mins. Add the cream & black pepper and the sieved juices from the cooked mussels.
To cook the mussels : Place the mussels with ½ a cup of water and set over a fierce heat for 3-4 mins. Turn them over as they start to open. Keep the lid on the pan. Using a slotted spoon, scoop them out and divide between 2 large deep plates. Discard any mussels that remain closed.
Pour the sauce over the mussels and sprinkle liberally with chopped parsley and garnish with lemon slices.
