Anglesey Spice Cake.

Preheat the oven to 190 0 C (gas mark 5). Grease and line the bottom of an 8 inch round cake tin. Beat all the cake ingredients together and then fold in the sultanas. Spread the mixture in the tin and bake for 20 minutes until risen, firm and golden brown. For the topping, mix together the butter, sugar and cinnamon and as soon as the cake is removed from the oven, spread the mixture over the top. Leave to stand until the butter has soaked into the cake. |
