Glantraeth Eggs
3 Medium size leeks
½lb. Hot mashed potato
3 Hard boiled eggs
2 Rashers of grilled Smokey bacon
½pt. Bechamel sauce
4oz. Grated cheese
1 teaspoon Wholegrain mustard
1 Clove of garlic

Clean and chop the leeks and simmer for 10 minutes. Strain and season. Arrange the mashed potato in the bottom of the dish, cut the eggs in half and place on the potato. Arrange the leeks around the edge of the dish. Season the sauce and mix in the mustard, garlic, bacon and half the cheese. Pour the mixture over the eggs. Sprinkle with the remainder of the cheese. Brown under grill, serve with a lemon wedge and chopped parsley.
