This fine Victorian Country House, set in seven acres of grounds overlooking the bay and picturesque village of Cemaes, was first built for the famous Welsh soldier General Sir Owen Thomas, MP, "The Welsh Warrior". Now fully restored by its present owners, its airy bars and 14 ensuite bedrooms makes it an ideal base to explore the wild beauty spots of North Anglesey.

In the evening just relax with a fine meal prepared by the excellent chefs and their staff. All food is cooked to order and wherever possible local fresh ingredients are also used. The restaurant and bars are open to non-residents and the homely atmosphere and friendly staff will make you very welcome.

Anglesey Honey & Apple Cheesecake.
Base :
8oz. Digestive biscuits
3oz. Melted Welsh salted butter
½ tspn. Ginger powder
Filling:
7oz. Soft cheese
1 tbspn. Gelatine powder
1pt. Whipped Anglesey double cream
¼pt. Clear honey
Topping:
1lb. Fresh orchard apples
Lemon Juice
3oz. Granulated sugar
2oz. Arrowroot

Crumb the biscuits, add ginger and mix. Add butter, combine and press into a 8 inch cake tin. Allow to harden. Dissolve gelatine in a little water. Whisk cream, add cheese and whisk until even. Add gelatine and stir in honey. Pour over base and allow to set in fridge for 3-4 hours. Peel, core and chop apples, place in heavy-bottomed pan. Add a little water, lemon juice and sugar; bring to boil. Cook gently until apples are pureed, take off heat. Dissolve arrowroot in a few drops of water, add to puree. Allow to completely cool before topping cheesecake. Serve with whipped cream and slices of apple.
