This seaside hotel enjoys a magnificent location on the Anglesey coast overlooking the Trearddur Bay. Many of the spacious bedrooms, all of which are ensuite, have panoramic views over the bay. There are also nine studio suites, including one with a four-poster bed. The comfortable lounge is the perfect place to relax or enjoy an aperitif in one of the hotel bars. For those who find the Irish Sea too bracing there is an indoor pool. The restaurant enjoys a reputation for excellent food, including locally caught fish and seafood complimented by fine wines.

Anglesey Kebabs
Serves Two:
6 Rosemary twigs
6 Anglesey Oysters
6 Local queen scallops
6 Half apricots
2 Large rashers of bacon
1 Cup of long grain & wild rice mixed together
Marinade:

1oz. Sweet chilli sauce
1oz. Soy sauce
1oz. Red wine
Satay Sauce:

300mls/half pint Coconut milk
4 tbsp. Crunchy peanut butter
1 tbsp Fish sauce
1 tbsp. Lemon or lime juice
Salt and pepper

Marinade the oysters overnight in the fridge. For the sauce, mix all the ingredients in a pan bring to boil and season with salt and pepper. Meanwhile, remove the leaves from halfway down on each rosemary twig. Cut each bacon rasher into 3 and wrap each oyster,skewer with rosemary twig and add scallops and apricots. Cook under grill until bacon is crispy. Cook the rice and press into mould.
To serve; Turn out rice onto plate, place kebab on plate and edge both rice and kebab with sauce.
